The Michigan Pavilion, hosted by the MDARD, highlights Michigan food and beverage companies. The MDARD and Michigan Grape and Wine Industry Council will offer a food and wine pairing booth to highlight Michigan crops and wines. Delicious dishes will be prepared by Chef Paul Penney and offered to 8 people during each interval throughout the day. Two Michigan wineries will sample their wines along with this beautiful meal.

The 2011 Gordon Food Service, Spot Light Theater is no different.

On Tuesday October 18 Tammy Young, Executive Chef at Boomtown Kitchen and Tap, will be cooking live on the Show Floor. Her dishes will include:

  • Yukon Sauté – Sautéed Yukon gold potatoes, Hungarian hot peppers, Italian sausage, cherry bomb peppers, fresh herbs, garlic and white wine
  • Shrimp and preserved lemon risotto with crispy prosciutto chips and basil oil

Chef Young specializes in Italian/French fusion style cooking and works all from scratch. Recently Chef Young put her skills to the test in the Gleaners Iron Chef 7 Competition on August 11, 2011 where she was named the new Champion. She competed against Champion Chef James McNulty from the Downtown Main Martini Bar & Grill. The secret ingredient for this year’s competition was corn, which was provided in the form of raw ears to box cereals. Chef Young won the competition with her quail entree and corn pudding dessert.
